Application of combined tetrad tests and multi‐sip Temporal Check‐All‐That‐Apply to enhance carbonated beverage flavor differentiation

Abstract Sensory discrimination testing is conducted for many reasons, including—but not limited to—flavor matching initiatives. When conducting these tests on carbonated beverages, there an established protocol the best way to differentiate multifaceted products. This in part due formulations exhibiting a spectrum of carbonation (CO 2 ) levels, flavors and ingredients. research tetrad at four time points CO dissipation (0, 5, 10, 15 min) two temperatures (refrigerated ambient) determine sample preparation scenarios which “high discrimination” “low differentiation occurred. Subsequently, select beverage pair was assessed using multi‐sip Temporal Check‐All‐That‐Apply (TCATA). The objective this assess if identifying optimal preparations that enhanced from series allowed more discriminatory TCATA assessment. Results indicated significantly affected ability beverages attributes, but scenario always differentiating condition. Future work will aim increase knowledge interactions with additional products further validate generalize findings. Practical Applications professionals gain how optimize discovery product might be better differentiated.
